Chives stimulate the appetite and help promote good digestion.
They can ease stomach upset, clear a stuffy nose, reduce flatulence (gas) and prevent bad breath.
They are mildly diuretic, help lower high blood pressure and have some antibacterial properties.
They can help lower cholesterol by stimulation fat digestion.
The sulfur compounds help expel mucus, especially when you have a cold.
Chives contain potassium, calcium, iron, folic acid, vitamins A and C.
Chive flowers, picked fresh, and added to a bottle of olive oil make a mild, lilac colored oil in about a week.
Place 1-1/2 ounces of fresh picked flowers in 1 quart of oil. Use on salads.
